Welcome to Fary Lochan distillery.

Over the past years our interest in whisky making has increased. A research trip to Scotland has been carried out and another study trip has bin made. The ideal location of the distillery has been found.

Now the distillery is a reality — we are making whisky. The first cask has been filled at the end of the year 2009. Here you see the FARY LOCHAN distillery. In accordance with Scottish traditions the distillery is situated out in the countryside right by a stream. The little lake in the front is the Fary Lochan.

The first bottles from FARY LOCHAN

Released on the 4th of September 2010

This is the first release from the Fary Lochan distillery. It is New Spirit bottled at 46% abv, 50 cl.

New Spirit is the raw spirit you get after the malt has been distilled but before the spirit is filled into oak casks. The spirit is not classified as whisky before it has matured on oak casks for a minimum of 3 years.

When bottled the clear raw spirit stops maturing immediately. A bottle of New Spirit is often purchased as a collector’s item, and is usually not intended for consumption.

Fary Lochan has chosen a different path by adding a piece of oak from used bourbon barrels to the New Spirit bottles. In this way the New Spirit will develop over the next 2 to 3 years. Your bottle of New Spirit will gain character from this unique piece of oak and therefore it will be different from the other bottles of New Spirit. We expect our New Spirit to taste like whisky eventually. It will not be real whisky though, as the spirit must mature on wooden casks for a minimum of 3 years in order to be characterized as whisky.

Only a very limited release of 500 numbered bottles of New Spirit have been produced. We will produce more than these 500 bottles, but none of them will be numbered. The New Spirit is made on the basis of pure non-smoked malted barley.

The New Spirit was distilled on the 27th of July 2010 and bottled on the 30th August 2010 after a short period of maturing. All bottles come in a specially designed New Spirit package.

The second release from FARY LOCHAN

Released on the 2nd of April 2011

This is the second release from the Fary Lochan distillery. It is a New Spirit bottled at 46% abv, 50 cl.

New Spirit is the raw spirit you get after the malt has been distilled but before the spirit is filled into oak casks. The spirit is not classified as whisky before it has matured on oak casks for a minimum of 3 years.

When bottled the clear raw spirit stops maturing immediately. A bottle of New Spirit is often purchased as a collector’s item, and is usually not intended for consumption.

Fary Lochan has chosen a different path by adding a piece of oak to the New Spirit bottles – this time a piece of Danish oak from our own forest. The oak stick is treated the same way as the oak used for the casks – dried for three years and burned. In this way the New Spirit will develop over the next 2 to 3 years. Your bottle of New Spirit will gain character from this unique piece of oak and therefore it will be different from the other bottles of New Spirit. We expect our New Spirit to taste like whisky eventually. It will not be real whisky though, as the spirit must mature on wooden casks for a minimum of 3 years in order to be characterized as whisky.

A very limited release of only 500 bottles of New Spirit has been produced. This time the New Spirit is made on the basis of pure malted barley with a bit of peat added (1.5 PPM).

The New Spirit was distilled on the 5th of February 2011 and bottled on the 27th February 2011 after a short period of maturing. All bottles come in a specially designed New Spirit package.

The third and final release from FARY LOCHAN

Released on the 10th of April 2012

It is a New Spirit bottled at 46% abv, 50 cl.New Spirit is the raw spirit you get after the malt has been distilled but before the spirit is filled into oak casks. The spirit is not classified as whisky before it has matured on oak casks for a minimum of 3 years.

Fary Lochan has chosen a different path by adding a piece of oak to the New Spirit bottles – this time French oak from used wine casks. In this way the New Spirit will develop over the next 2 to 3 years. Your bottle of New Spirit will gain character from this unique piece of oak and therefore it will be different from the other bottles of New Spirit. We eventually expect our New Spirit to taste like whisky. It will not be real whisky though, as the spirit must mature on wooden casks for a minimum of 3 years in order to be characterized as whisky.

A very limited release of only 500 bottles of New Spirit has been produced. This time the New Spirit is made on the basis of pure malted barley. The taste extracted from the French oak is expected to be more smooth and round than the first two releases.

The New Spirit was distilled on the 20th of February 2012 and bottled on the 06th March 2012. All bottles come in a specially designed New Spirit package, and were officially released on the 10th of April 2012.
